If grapes are both green and purple, why are grape jellies always purple?

All grapes have juice that is the some color which is a whitish or yellowish hue. It is only the color of the skins that are different. When Welch's grape jelly began in 1869, the purple color of the skin of the dark Concord grapes were used. This color has continued.
