I am only aware of the Van Gogh Self portrait painted after he cut of his ear that clearly shows the ear is missing. I have never heard of a famous statue, but I did find the following. You will have to decide how accurate it is.

The ear of a Stalin statue has been stolen from an exhibition in Berlin. It used to belong to a bronze statue pulled down overnight by GDR authorities in 1961 when the ideas of the Soviet leader became unpopular. A worker employed to dismantle the statue saved the ear. After his death, his son-in-law gave the six-inch bronze piece to Cafe Sibylle for an exhibition on local history. Owner Artur Schneider told the Berliner Morgenpost newspaper the ear went missing while screwed to a wall in the cafe, which was crowded at the time. Police have started an investigation. So far, no witnesses have come forward.

A court has been told how an artist stole a large number of dismembered body parts from the Royal College of Surgeons to make 'macabre' sculptures.
Anthony-Noel Kelly, 42, a sculpture tutor, paid an insider to help him wrap the parts in black bin liners and then smuggle them out at night in a rucksack, London's Southwark Crown Court heard.
