Why does peanut butter stick to the roof of your mouth?

The high level of protein in peanut butter draws the moisture away from your mouth as you eat it like a sponge soaking up water.
Because of the high fat and low moisture content, the butter is not easily diluted by saliva. The combination makes it difficult to get the stuff off of the roof of your mouth.
