umm... I would say the liver. it makes bile or however you spell it to break down fat, it produces insulin, and some other things. I can't remember them all. I can't think right now

What about skin? It can be tough and protective, or soft and delicate. It constantly replaces itself causing most of the dust in our homes. It bends and stretches, changes colour, and best of all it keeps all the other bits in. Where would we be without skin??

The brain does control much of the body via the spinal cord and vagus nerves and also processes our sensory data into thoughts which I find impressively versatile.
Despite that, I'm not so quick to dismiss TAW's answer that the liver is the most versatile. It's often said that the liver performs over 500 functions and it certainly performs a wide variety of tasks that impact on every area of the body. It stores sugar for energy, creates proteins, helps to digest fat by producing bile, eats up unwanted bacteria and dead cells, breaks down alcohol and other drugs, is involved in the body's temperture regulation, and much more. It even turns your poo brown!
