Every 500 years, according to Hutchinson's Encyclopaedia, the Oxford Companion to English Literature and several quotations in the Oxford English Dictionary.
However, there are usually more than one version of a classical myth, and so there may be other equally good answers.

There is only one Phoenix at a time; it lives for many years (accounts vary from 500, 540, 1000 or 1460 years.) This legend was very common among the Egyptians, the Greek, oriental cultures, and during medieval times. http://www.eaudrey.com/myth/phoenix.htm
