I don't know that there is a single "sweetest" or a single "sourest" edible substance. How would you measure the sweetness or sourness? On what scale could you determine whether a lime is more sour than a lemon? Its all subjective, depending on who is doing the tasting.

There is no consensus as to what is the sourest edible substance. Some sources suggest that umeboshi (Japanese pickled plum) or tamarind might be good candidates. Stevia, being between 150 and 250 times sweeter than sugar, is definitely one of the sweetest edible substances if not the sweetest.
