Chilli is the stew.
Chili is the pepper.

In the Dictionary Chili is both the spice and the dish.

Chile is the country.

And chilli is an alternate spelling of Chili.

On the eastern side of the Atlantic ocean, the correct spelling is chilli with two l's.

According to my dictionary all the spellings are correct and (without the capital c) all mean "A pungent pepper related to the tomato" or "a thick sauce of meat and chilies".
