Even then, the states are not rectangular, because the north south sides are not parallel. They get closer together as they reach the north end of the state. The northern boundary is shorter than the southern boundary.

And apart from that, the curvature of the Earth will mean the 'rectangle' has curved sides (in the third dimension)...
