To name three:

West Ham completed the signing of Benayoun in July 2005 for £2.5 million with Benayoun signing a four-year contract.

My expert thinks it was the captain of the 1970 national team although it may only have been in a friendly, I can't tie the exact name up but Yochanan Vollach seems a candidate.

Satguru, this is my exact uncertainty - i am not sure if it was Yochanan Vollach and/or Motale Schpiegler who played very shortly for the Hammers back in 1970. Anyone knows?

It took me weeks to find this question again, the answer is Mordechai Spiegler, West Ham and Israel, but although my verbal source seemed certain this article says Ron Greenwood was banned from signing him as foreign players were restricted. More research is clearly needed now
Way back in the 1970 World Cup they held Sweden and Italy to draws and their captain, Mordechai Spiegler, so impressed Greenwood that he wanted to sign him for West Ham. The Football League, however, refused to lift the ban on foreign players.

Thanks for your perseverance, Satguru! Israeli sources i've checked confirm that Schpiegler was not able to play for Westham due to work permit issues. He became the first Israeli to play in Europe (PSG, 1972) and in USA (NY Cosmos).

For Hebrew readers, from FC Maccabi Netanya site:
